INGREDIENTS
For the pastry
- 3 cups all purpose flour (400gr)
- half cup of virgin olive oil (melted butter or veggie oil can be used)
- 1 tsp salt
- ½ tsp sugar (optional)
- 1 and a half cup of water (as much as the dough can take)
For the filling:
there are lots of options but trust me, patato and pastry goes really well
- 3 boiled potatoes
- 1 finely choped onion
- Shredded cheese (optional)
- 1 tsp of black papper, salt, cumin, paprika
- ½ tsp allspice (optional)
- 1 tbsp any oil
HOW TO MAKE IT?
- Combine flour, oil, salt and water in a bowl. (The amount of water you add depends on the quality and brand of flour, so you can add the water little by little.)
- Knead the dough until it’s smooth. Dough should be a pliable, smooth, not sticky.
- Cover it for 15 minutes to rest. (If you do this step, it will be easier to shape.)
- Sprinkle flour on the work surface to prevent sticking.
- Cut the dough into equal pieces.
- Roll out them into rectangles and let it rest.
- Sautee chopped onions until their color slightly turns gold.
- Add boiled and chopped onions, mix it regularly.
- Add all the spices and the cheese.
- Sautee continously for 3 minutes ıf the mixture sticks to the pan, add some milk.
- Cool it down before using it.
- Fill the dough and thin it with your hands. (Fold other side of pastry over to cover Filling. You can use water to seal it) It should look like a covered pizza.
- Cook both sides in a preheated pan on low heat.
