Stuffed Zucchini Blossoms in Yogurt Sauce

We continue our delicious Turkish food recipes series with a special recipe.

Ingredients
  • 10 zucchini blossoms
  • 1/2 cup cooked rice
  • 1 small onion, grated
  • 1/4 cup fresh dill, finely chopped
  • 1/4 cup fresh mint, finely chopped
  • 1/4 cup olive oil
  • 1 teaspoon ground sumac
  • Salt and pepper to taste

For the yogurt sauce

  • 1 cup plain yogurt
  • 1 garlic clove, minced
  • 1 tablespoon olive oil

 

Instructions
  • Gently rinse and pat dry the zucchini blossoms. Remove the pistils carefully.
  • In a bowl, mix the cooked rice, grated onion, dill, mint, olive oil, sumac, salt, and pepper.
  • Stuff each zucchini blossom with the mixture and fold the petals to seal.
  • Place the stuffed blossoms in a shallow pan, add 1/4 cup of water, and cook on low heat for 10 minutes.
  • Mix yogurt, garlic, and olive oil in a separate bowl to make the sauce.
  • Serve the stuffed blossoms warm, drizzled with yogurt sauce.
